Vacuum-seal the pumpkin, onion, and garlic along with salt, pepper, and cumin in a sous-vide bag. Set your sous-vide machine to 85°C and cook the mixture for 1.5 hours.
Once the pumpkin is tender, remove the bag and blend the contents until smooth. Add the vegetable broth and coconut milk (or cream), and blend again until you have a smooth soup. Heat the soup in a pan and season with additional salt and pepper as needed. Garnish with fresh herbs.
