Sous-Vide Apple with Cinnamon Mousse and Puff Pastry
A delicious dessert featuring sous-vide apples infused with vanilla, paired with a rich cinnamon mousse and crispy puff pastry, garnished with pine nuts and raisins for an extra touch of flavor.

Ingredients
Sous-Vide Apple:
- 400 grams of Golden Delicious apples
- 80 grams of granulated sugar
- 1 vanilla pod
Sous-Vide Mousse:
- 3 decilitres of milk
- 3 decilitres of cream
- 1 cinnamon stick
- 6 egg yolks
- 90 grams of granulated sugar
Puff Pastry:
- 400 grams of puff pastry
Garnish:
- Pine nuts
- Raisins

Preparation Method
Sous-Vide Apple:
- Peel and core the apples, then cut them into wedges.
- Place the apples in a sous-vide vacuum bag along with the granulated sugar and vanilla pod.
- Seal the bag and cook it sous-vide in the water bath for 12 minutes at 60°C.
- Allow the apples to cool down thoroughly.
Sous-Vide Mousse:
- Beat the egg yolks with the sugar.
- Add the cream and milk to the egg mixture.
- Place the mixture and the cinnamon stick in a vacuum bag, seal tightly, and cook sous-vide at 92°C for 15 minutes.
- Let the mixture cool, then pass it through a fine sieve.
- Pour the mousse into a siphon, charge it with a gas cartridge, and store in the refrigerator.
Puff Pastry:
- Roll out the puff pastry and cut it into 10 cm discs.
- Bake the discs on a baking tray at 190°C for 20 minutes.
Garnish:
- Place the puff pastry on serving dishes.
- Add the sous-vide apples and top with the cinnamon mousse.
- Finish with a sprinkle of pine nuts and raisins
