Sous-Vide "Asian Infused" Mojito

A unique twist on the classic mojito, this Asian-infused version is made by sous vide infusing rum with aromatic lemongrass, kaffir lime leaves, and fresh mint. It's the perfect refreshing drink with a touch of exotic flavor.

Preparation time:
4 hours

Ingredients

  • 750 ml rum
  • 4 medium stalks of lemongrass – lightly bruised (use a mallet)
  • 4 kaffir lime leaves
  • Zest of 1 lime
  • Juice of 1 lime
  • 3 medium sprigs of fresh mint leaves
  • Soda water

Preparation method

  • Preheat your sous vide water bath to 57°C.
  • Place all the ingredients in a vacuum bag and vacuum seal it, removing as much air as possible.
  • Submerge the bag in the sous vide water bath and cook for 4 hours.
  • Remove the bag from the water and allow it to cool completely. Best served chilled.

  • Pour 1½ oz of infused rum over ice and top with soda water.
  • Garnish with a few sprigs of mint, a slice of lime, and a stalk of lemongrass.
  • Serve and enjoy!
