Sous-Vide "Asian Infused" Mojito
A unique twist on the classic mojito, this Asian-infused version is made by sous vide infusing rum with aromatic lemongrass, kaffir lime leaves, and fresh mint. It's the perfect refreshing drink with a touch of exotic flavor.

Ingredients
- 750 ml rum
- 4 medium stalks of lemongrass – lightly bruised (use a mallet)
- 4 kaffir lime leaves
- Zest of 1 lime
- Juice of 1 lime
- 3 medium sprigs of fresh mint leaves
- Soda water
Preparation method
- Preheat your sous vide water bath to 57°C.
- Place all the ingredients in a vacuum bag and vacuum seal it, removing as much air as possible.
- Submerge the bag in the sous vide water bath and cook for 4 hours.
- Remove the bag from the water and allow it to cool completely. Best served chilled.

- Pour 1½ oz of infused rum over ice and top with soda water.
- Garnish with a few sprigs of mint, a slice of lime, and a stalk of lemongrass.
