Tompouce
Tompouce is one of the most iconic Dutch pastries, and it’s no wonder why! With its flaky puff pastry layers and a rich, creamy custard filling, it’s a treat that’s loved by many. While traditionally made in the oven, we’re giving it a modern twist by using the SousVide method to make the custard. This ensures the perfect, velvety filling every time!
Ingredients (for the Custard):
- 500 ml whole milk
- 100 g sugar
- 3 egg yolks
- 40 g cornstarch
- 1 tsp vanilla extract
Instructions:
- Preheat Your SousVide: Set your SousVide precision cooker to 85°C (185°F). This is the ideal temperature for creating a smooth and rich custard.
- Prepare the Custard: In a bowl, combine the milk, sugar, egg yolks, cornstarch, and vanilla extract. Whisk everything together until the mixture is smooth.
- Vacuum Seal the Custard: Pour the custard mixture into a vacuum-seal bag. Seal the bag tightly, making sure there’s no air inside, so the custard cooks evenly in the water bath.
- Cook in the SousVide: Place the vacuum-sealed bag in the SousVide water bath and cook for 1 hour at 85°C. The SousVide method ensures that the custard is cooked slowly and evenly, producing a perfectly smooth texture.
- Strain the Custard: Once the cooking time is up, carefully remove the bag from the water bath. Pour the custard through a fine mesh sieve into a bowl to remove any lumps or bits of cooked egg. Let the custard cool to room temperature.
- Assemble Your Tompouce: Once the custard has cooled, it’s time to fill your Tompouce. You can use store-bought puff pastry for convenience. Simply cut the pastry into rectangles, fill one layer with the custard, and top it with another layer of puff pastry. You can even add a layer of icing on top for the finishing touch!
Tips for the Perfect Tompouce:
- Make the Custard Ahead: You can make the custard the night before and refrigerate it. This will save time on the day you plan to assemble the Tompouce.
- Puff Pastry Tip: If you want to get the perfect puff, bake the puff pastry in the oven or air fryer before filling it with the custard. This ensures that it’s golden and crispy.
- Customize the Icing: Traditional Tompouce has a pink icing on top, but feel free to get creative with the color or even add a hint of flavor like vanilla or almond to the icing.
